Preheat oven approx. 180C, grease the springform pan (26cm diameter) and peel 6 large apples (Remove the core). Mix baking mixture with 100g butter and 1 egg until you have a ball of dough. Spread 2/3 of the dough even on the bottom of the springform pan. Form the remainder of the dough into a long coil. This will form the sides of the crust, once pressed into the pan and it should be at least 2.5 cm high. Cut apples in half and place, with cutting side down, into springform pan. Fill the apples with the included raisins, cut the remaining apples in small pieces and place them in the gaps. Mix filling mixture with 100ml whipping cream. Bring 500ml whipping cream to a boil and remove from heat. Stir in the mixture with a whisk and bring to a boil for another 30 seconds. Fill instantly into the springform pan and top with cinnamon sugar mix. Bake for 50 - 60 minutes in the lower part of you oven (160 deg fan bake). Let cake cool down for at least 1 hour before removing springform pan. Enjoy!
